Mini Oat Pancakes
Ingredients:
1 cup of gf oats
1/2 cup of almond milk (or preferred milk)
2-3 tablespoons of agave
1 tablespoon of coconut butter or nuttlex
pinch of cinnamon
pinch of salt
1 teaspoon of brown sugar or stevia
fresh strawberries & bananas, chopped
Method:
1. Add oats to your food processor and pulse until it forms a fine powder. Add a tiny pinch of salt, cinnamon, preferred sugar & mix.
2. Transfer your oat flour to a bowl and add milk stirring until it becomes an appropriate constancy. (The amount of milk you use depends on which type of milk you use, I made my mixture quite thick as I made mini pancakes)
3. Heat coconut butter on a nonstick pan untill melted and add a large spoonfull of the mixture at a time. If your pan is big enough and you want to make mini pancakes you can make two at a time.
* This mixture made enough mini pancakes for two people.

Hey there, this is a really hard question to answer as I don’t have a regular meal plan. I eat breakfast (as soon as I get up) lunch and dinner about about 3-6 snacks in between. It all depends on what time I wake up that day go to bed, if i’m meeting friends, if i’m cooking for my boyfriend etc. You should never go feeling hungry, healthy food can be filling too. Make sure you include things like grains, nuts, seeds into your meals, they provide needed nutrients and make you feel full. Things like brown rice, quiona, rice/corn thins, sweet potato, pumpkin are great to add to salads and veggies. If your hungry late at night, have some fruit, it’s usually easy to digest as it’s water based. I almost always have muesli bars, an apple & a bottle of water with me where ever I go incase I want a snack. I eat a lot of nuts (raw nuts! almonds, cashews, macadamias, raisins, dates, figs, gojis) I don’t have a regular exercise routine either, I like to walk places when I can (get’s a bit hard when it’s raining like this!) when I have my dog I’ll take her around the block in the afternoon. Sometimes I’ll meet friends for a walk, it’s a nice way to catch up and get fresh air. My advice would be make sure each meal has something filling involved, eat smaller portions more often, and don’t go hungry! you will only end up making unhealthy decisions late at night. Also, drink lots of tea! it will keep you warm and help you digest! xx

I also often find it hard to order when I’m out for dinner with friends (gluten and dairy free) What I have been doing lately is ordering sides three or four and sometimes they will put it on the one plate for you, so you kind of create your own meal. The side salad isn’t usually full of unhealthy stuff like the one on the main menu, then you can order that with baked potato, seasonal vegetables etc. and if you can eat it, bread. If there is a salad on the main menu you like, just ask for the dressing on the side :)
